It’s National Vegetable Month, and you weren’t one of those kids who turned your nose up at vegetables, were you? You still do? No! If that’s the case, your parents did you a disservice! You don’t know what you’re missing!
Sampling the delicious vegetable-based soups at Robin’s Nest Café is the perfect way to test the waters, or rather, the wonderful soups!
Five Onion Soup is on the menu every day, and the soup specials change daily. Just a few of the amazing vegetable-based soups offered at the Café are Cream of Asparagus, Herb Cheese and Tomato, Cream of Mushroom, French Onion, Vichyssoise (basically, potato-onion), Cream of Cauliflower, and more. With the weather just starting to cool off a bit, can you imagine having a bowl of one of these delectable vegetable-based soups, with a chunk of crusty, chewy bread, or a half-sandwich?
Also on the menu are assorted salads with many “fixin’s,” a vegetarian platter, and vegetable and vegan platters on the catering menu.
Did you also think the abundance of vegetables ends when the summer wanes? Not so! Late summer, fall, and winter crops abound! In Virginia alone we have (yes, in alphabetical order for ease of reading) beets, broccoli, broccoli raab, brussels sprouts (if you don’t like them, you’re cooking them wrong), cabbage (same here), carrots, cauliflower, celery, collard greens, kale, leeks, onions, parsnips, potatoes, radicchio, spinach, squash, sweet potatoes, and turnips. The summer farmer’s markets may be closed but many roadside stands are still open, as are the “grown locally” sections at the supermarket, but don’t stop there. Experiment!
If you think you don’t like vegetables try roasting them in the oven with olive oil, garlic, and finish off with a touch of salt. Roasting brings out the sweetness, and you’ll find out what you’ve been missing all these years! Enjoy the deliciousness of the tastes and textures, as well as the amazing health benefits!
